Recipe in Spotlight - Passover Chocolate Chip Mandel Broit

This is my mother’s recipe, and it was given to her by my preschool teacher when I was two years old. She has been making them ever since. The best part is that you can make a number of variations on this recipe. I make it using either raisins or dried cranberries, instead of the chocolate chips.

Passover Chocolate Chip Mandel Broit

3 eggs

1 cup sugar

½ cup oil

3 tablespoons water

1 cup chocolate chips

½ cup chopped nuts

2 teaspoons orange juice

2 cups matzoh meal

 

Beat eggs and sugar until thick and lemon colored. Add oil and water and beat until blended. Stir in chips, nuts, and juice. Stir in matzoh meal until well mixed. Let stand in refrigerator for 45 minutes. Wet hands and form dough into strips 3 inches wide on cookie sheet that has been oiled and dusted with matzoh meal. Bake at 375 degrees for 20 minutes until pale golden brown. Cut immediately into diagonal strips. You can substitute raisins or dried cranberries for the chocolate chips. Freezes well.
